Avocados: rich in healthy fats, stuffed with nutrients, antioxidants, and full of serious brain fuel. They’ll keep your stomach (and your waistline) happy! But just eating regular avocados can get a bit boring at times, so here are five amazing avocado recipes that will blow your mind.

 

Tasty Avocado Boats

Whether you’re in the mood for bacon, a refreshing treat, or a hearty breakfast, you’ll love these avocado boats. Here are just five ways that you can transform the unassuming avocado into a bursting-with-flavor snack! Each recipe should only take about 30 minutes to make. Talk about fast and delicious!

Avocado boats are quite easy to assemble. Cut an avocado in half, the long way. Remove the pit. With the pit gone, there should be a nice empty space waiting to be filled with your favorite cuisine. Stuff the avocado halves with anything you can dream up: salad, eggs, salsa, bacon bits—anything! Be creative! And since each avocado makes two halves, or “boats,” you can hoard the snack all for yourself or share it with someone you love.

 

Pico De Gallo: Chopped tomato, red onion, garlic granules, jalapeño, cilantro, Himalayan sea salt, and lime juice

 

Turkey BLT: Off-the-bone turkey breast, nitrate-free bacon, chopped tomato, and fresh spinach

Baked Egg: Crack an egg into the center of your avocado half. Bake in your oven at 350 degrees for 20 minutes until the egg whites are opaque
