Markon’s 5-Star Food Safety® program puts the highest priority on our customers’ top concerns — the safety and good health of diners. Nicholas and Company is not only a proud member-owner of Markon, but Peter Mouskondis, CEO of Nicholas and Company, is also the current chairman of the Markon Board. In 2016, we saw the final implementation of the Food Safety Modernization Act (FSMA). This law was put into place in response to several large foodborne illness outbreaks in the 2000s that raised food safety concerns for consumers.

As a leader of food safety practices in the industry, these increased guidelines along the supply chain have already been implemented at Nicholas and Company and with all other member-owners of Markon across the U.S. and Canada.

5-Star Food Safety® is based on specifications, inspections, and information at five key points: fields, facilities, transportation, distributor warehouses and your kitchen.

1. Fields

  • Third-party audit reviews for Good Agricultural Practices (GAP)
  • Detailed specifications
  • Regular inspections by our Markon QA team
  • Water testing at all stages of harvest

2. Facilities

  • Third-party audit reviews for Good Manufacturing Practices (GMP) and Hazard Analysis Critical Control Points (Ready-Set-Serve only)

  • GMP observational visits and product quality standards verification
  • Water testing
  • Environmental monitoring program

3. Transportation

  • Temperature monitors on trucks originating in Arizona, California, Idaho, New Mexico, Oregon, Texas (South Texas), and Washington
